Peel and cube the monkfish tails.
Peel and roughly chop the carrots, onion and garlic cloves.
Put a drizzle of olive oil and a knob of butter in the LOQY casserole dish.
Brown the monkfish pieces, add the aromatic garnish and deglaze with the
white wine.
Add the tomato sauce and simmer for 1 hour over a very low heat.
Mince the spring onions and chilli pepper.
Add to the simmering monkfish. Leave to cook for 5 minutes.
Serve with rice.
