Warm the milk, then take off the heat before adding the dried yeast. Leave to rest for 10 minutes.
Into a food processor add the sugar, salt, beaten eggs and the milk. Add the flour and mix for 10 minutes at medium speed.
Then add the butter and mix for another 15 minutes. Cover the bowl with a cloth and leave to proof for 90 minutes in a warm place.
Punch the dough to release the air before adding the chocolate chips and diced candied oranges, forming the dough into a ball in order to incorporate them thoroughly.
Butter the kouglof mould and layer the base of the of mould with the almonds.
Make a hole in the middle of the ball of dough and place the dough in the mould. Leave to proof for another hour in a warm place.
Preheat the oven to 180° C (fan-assisted) and cook the kouglof for 35 minutes.
Leave to cool then remove from the mould. Sprinkle with icing sugar before serving.
