1. Preheat the oven to 180°C.
2. Roll out the puff pastry and cut into 20/20 cm squares.
3. Garnish one side of the square, leaving a 1 cm margin all round. Top with half a mozzarella, a few basil leaves, half a sliced apricot and a drizzle of pistachio paste.
4. Fold the square in half and seal the edges with your finger.
5. Place the squares on the perforated baking tray covered with the baking mat.
6. Place in the oven for 15 minutes.
