Arrange your quartered apricots in the sauté pan. Add lavender (or rosemary)
Sprinkle with jam sugar. Stir slightly with the wooden spoon and leave to stand for 10 minutes.
Heat everything over medium/high heat for 5 minutes then lower to medium heat and stir occasionally.
Skim the foam as you go. When it's no longer foaming, the jam is cooked.
For a smooth, chunk-free jam, mix with a hand blender.
Pour the jam into jars immediately using the ladle.
