Makes 3 Vienna baguettes

Baking time : around 17 minutes
Begin by diluting the yeast in the milk (warmed)
Add the salt, sugar and flour to the bowl of your dough mixer, then pour in the yeast/milk mixture together with an egg.
Knead for around five minutes at medium speed with the hook attachment.
Cut the butter into small pieces and add to the mixture, then knead again for around eight minutes.
Cover the dough and leave to rise for 90 minutes in a cold oven.
Gently knock back the dough with your fist then divide it into three equally sized pieces.
Add the chocolate chips to the middles and edges of your dough pieces and roll them into baguette shapes.
Arrange the baguettes on a perforated baking sheet, score each of them with a knife, and apply the milk and egg yolk glaze.
Leave to rise again in a cold oven for around one hour.
Once the second rise is finished, bake your baguettes for 17 minutes at 180°C/gas mark 4.
